Mix in the remaining flour and ground almonds, then stir in the sultanas, raisins, currants, cherries, lemon zest, brandy, apricot jam and almond extract. Spoon the mixture into the prepared tin and level the top with a palette knife. Bake for 1½ hours, then reduce the oven temperature to 140°C/Fan 120°C/Gas 1 and bake for a further 1½ hours or until a skewer inserted into the cake comes out clean.

Leave the cake to cool in the tin, then turn out onto a wire rack. Prick the top of the cake all over with a skewer and spoon over a few tablespoons of brandy. Wrap the cake in baking parchment and store in an airtight tin. Feed the cake with a tablespoon of brandy every week until Christmas.

To finish, sift over a layer of icing sugar before serving.
