Ingredients

For the Cake Roll:

  • 3 large eggs
  • 3/4 cup granulated sugar
  • 2/3 cup all purpose flour

Instructions

Cake Roll:

  1. Preheat oven to 375 F. Grease a 15 x 10 inch jelly roll pan and line with parchment paper.
  2. In a large bowl, beat eggs and sugar until light and fluffy, about 3 minutes.
  3. In a separate bowl, whisk together flour, baking powder, salt and cocoa powder.

  3. Unroll cake and spread cream cheese mixture over the cake. Starting at the short end, roll cake back up.
  4. Wrap cake roll in plastic wrap and refrigerate for at least 2 hours.

Icing:

  1. In a medium bowl, combine powdered sugar, cocoa powder, butter and vanilla.
  2. Add enough hot water to make a thick, spreadable icing.
  3. Spread over cake roll. Use a knife to make lines in the icing to resemble a giraffe's hide.
  4. Refrigerate for at least 1 hour before serving.
