Ingredients

For the cake, you will need:

For the frosting, you will need:

  • 1/2 cup unsalted butter, softened
  • 2 cups confectioners' sugar
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground allspice
  • 3 tablespoons pumpkin puree (not pumpkin pie filling)
  • 1 teaspoon pure vanilla extract

Instructions

Making the cake: Preheat oven to 350°F. Grease and flour an 8-inch round cake pan.

In a medium bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, ginger, nutmeg, and allspice. Set aside.

In a large bowl, using an electric mixer, beat the butter and sugars until light and fluffy. Add the eggs, one at a time, beating until each is incorporated. Beat in the pumpkin puree and vanilla.

With the mixer on low speed, slowly add the dry ingredients and beat until just combined. Pour the batter into the prepared pan and spread evenly.

Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean. Cool the cake in the pan for 10 minutes before turning out onto a wire rack to cool completely.

Making the frosting: In a medium bowl, using an electric mixer, beat the butter until light and fluffy. Slowly add the confectioners' sugar, cinnamon, ginger, nutmeg, and allspice and beat until smooth. Beat in the pumpkin puree and vanilla until incorporated.

Spread the frosting on the cooled cake. Serve or store, covered, at room temperature.
