Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon salt
  • 1/4 cup plus 2 tablespoons cold butter, cut into small pieces

  • 1/4 cup plus 2 tablespoons cold water
  • 3 tablespoons sugar
  • 2 large eggs
  • 1/4 cup heavy cream
  • 1/4 teaspoon vanilla extract
  • 1/2 cup confectioners’ sugar
  • 1/4 cup plus 2 tablespoons butter, softened

Instructions

To begin, preheat your oven to 375°F. In a medium bowl, combine the flour and the salt. Cut in the cold butter and shortening until the mixture resembles coarse meal. Slowly add the cold water, stirring until the dough comes together. Form the dough into a ball and wrap in plastic wrap. Refrigerate for 30 minutes.

After 30 minutes, roll out the dough on a lightly floured surface until it is about 1/8 inch thick. Cut the dough into fifteen 3-inch circles and place them on a parchment-lined baking sheet. Prick the circles with a fork and bake for 8-10 minutes, or until lightly golden. Let the circles cool completely.

Meanwhile, in a medium bowl, whisk together the sugar and eggs until combined. Add the cream and the vanilla and whisk until blended. In a separate bowl, beat the softened butter and the confectioners’ sugar until light and fluffy.

To assemble the cake, place one of the circles of pastry on a cake plate. Spread 1/4 cup of the custard filling over the pastry and top with another pastry circle. Repeat the process until all the pastry circles are used, making sure to spread a thin layer of custard on the top pastry layer. Spread the remaining custard over the top of the cake and refrigerate for at least 2 hours.

When ready to serve, top the cake with the butter and confectioners’ sugar mixture. Slice and enjoy!
