- 2 large eggs
- 1 teaspoon vanilla extract
- 1 cup canned pumpkin puree
- ½ cup buttermilk
- 1 cup chopped walnuts
- 2 ½ cups cream cheese frosting
Instructions
Now that we’ve got all the ingredients together, it’s time to start baking!
Step 1: Preheat the Oven
Preheat your oven to 350°F. Grease and flour four 8-inch round cake pans. Set aside.
Step 2: Make the Batter
In a large bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, cloves, and salt. Set aside.
In the bowl of a stand mixer, cream together the butter and sugars until light and fluffy, about 3 minutes. Add the eggs one at a time, mixing well after each addition. Add the vanilla extract and mix until combined.
Add the pumpkin puree and mix until combined. Add the flour mixture and mix until combined. Slowly add the buttermilk and mix until combined. Fold in the walnuts.
Step 3: Bake the Cakes
Divide the batter evenly among the prepared cake pans. Bake for 25-30 minutes, or until a toothpick inserted into the center of the cake comes out clean. Allow to cool for 10 minutes before turning out onto a wire rack to cool completely.
Step 4: Assemble the Cake
Once the cakes are cooled, it’s time to assemble the cake. Place one layer of the cake on a cake board or plate. Spread with a layer of the cream cheese frosting. Top with the second layer of cake and spread with another layer of frosting. Repeat with the remaining two layers.
Gently spread the remaining frosting around the sides and top of the cake. Sprinkle with chopped walnuts, if desired. Serve and enjoy!
