Instructions

Preheat your oven to 180°C (350°F). Grease and line a 22cm round cake tin with baking paper.

In a medium bowl, combine the melted butter, sugar, eggs, flour, cinnamon, grated carrot, sultanas, walnuts, oil, buttermilk and vanilla extract. Mix until everything is well combined.

Pour the mixture into the prepared cake tin and bake for 40–45 minutes, or until a skewer inserted into the centre of the cake comes out clean. Allow to cool in the tin for 10 minutes before transferring to a wire rack to cool completely.

To make the frosting, simply beat together 250g of cream cheese, ½ cup of icing sugar and a teaspoon of vanilla extract until light and fluffy. Spread the frosting over the top of the cake and serve.
