Ingredients

  • 1 cup of dates, pitted and chopped
  • 1 cup of boiling water
  • 1/2 cup of butter, softened
  • 1 cup of white sugar
  • 2 eggs

  • 2 1/4 cups of all-purpose flour
  • 1 teaspoon of baking soda
  • 1 teaspoon of baking powder
  • 1/2 teaspoon of salt
  • 1/2 cup of chopped walnuts (optional)

Instructions

Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x13 inch pan.

Pour boiling water over dates, let stand for 10 minutes. Cream butter and sugar together. Beat in eggs and vanilla extract. In a separate bowl, sift together the flour, baking soda, baking powder, and salt. Add the flour mixture to the creamed mixture. Drain the dates and add to the batter, stir in walnuts if desired. Pour batter into prepared pan.

Bake in preheated oven for 35 minutes, or until a toothpick inserted in the center of the cake comes out clean. Let cool in pan for 10 minutes, then turn out onto a wire rack and cool completely.
