This Frozen Chocolate Mousse Cake is a decadent and delicious dessert. It combines two of my favorite desserts - chocolate mousse and cake - into one amazing treat. The dark chocolate mousse is rich and creamy, while the chocolate cake layer adds a nice crunch. When it's all frozen together, it's a perfect dessert to serve after a special meal. And the best part is that it's super easy to make!

Ingredients

For the chocolate mousse layer:

  • 4 ounces dark chocolate
  • 2 tablespoons butter
  • 1/2 cup heavy whipping cream
  • 2 eggs, separated
  • 1/4 cup granulated sugar

For the cake layer:
  • 1/4 cup butter, softened
  • 1/2 cup granulated sugar
  • 2 eggs
  • 1/2 teaspoon vanilla extract
  • 1/2 cup all-purpose flour
  • 1/4 teaspoon baking powder
  • 3 tablespoons cocoa powder
  • 2 tablespoons milk

For the chocolate topping:
  • 1/4 cup dark chocolate chips
  • 2 tablespoons butter

Instructions

For the chocolate mousse layer:

  • Melt the chocolate and butter together in a double boiler or microwave. Set aside to cool.
  • In a bowl, beat the egg whites until stiff peaks form. Gradually add the sugar, beating until glossy and stiff.
  • In a separate bowl, beat the egg yolks until light and creamy. Add the melted chocolate mixture and mix well.
  • In a third bowl, whip the cream until soft peaks form. Fold the whipped cream into the chocolate mixture.
  • Gently fold the egg whites into the chocolate mixture. Pour the mousse into an 8-inch springform pan.

For the cake layer:
  • Preheat the oven to 350°F.
  • Cream the butter and sugar together until light and fluffy. Add the eggs one at a time, beating well after each addition.
  • Add the vanilla extract and mix until combined.
  • In a separate bowl, sift together the flour, baking powder, and cocoa powder. Gradually add the dry ingredients to the wet ingredients, alternating with the milk.
  • Pour the cake batter into the springform pan, on top of the chocolate mousse layer. Bake for 20 minutes or until a toothpick inserted into the center comes out clean.

For the chocolate topping:
  • Melt the chocolate chips and butter together in a double boiler or microwave. Spread the melted chocolate over the top of the cake layer.
  • Place the cake in the freezer for at least 4 hours or until frozen solid.
  • Remove from the freezer and let sit at room temperature for 10 minutes before serving.
