Ingredients

For this custard cake recipe, you will need:

  • 1/2 cup (113 grams) unsalted butter, at room temperature
  • 1 cup (200 grams) granulated white sugar
  • 2 large eggs
  • 2 teaspoons (10 ml) pure vanilla extract
  • 2 cups (260 grams) all-purpose flour
  • 2 teaspoons (10 ml) baking powder
  • 1/4 teaspoon (1 gram) salt
  • 1 cup (240 ml) milk
  • 1/2 cup (113 grams) custard powder
  • 4 tablespoons (60 ml) boiling water
  • 1/2 cup (113 grams) unsalted butter, at room temperature
  • 1/2 cup (100 grams) granulated white sugar
  • 1 cup (240 ml) heavy cream
  • 2 tablespoons (30 ml) corn syrup
  • 1/2 teaspoon (2.5 ml) pure vanilla extract

Instructions

Making the Sponge Cake

Begin by preheating your oven to 350 degrees F (180 degrees C). Grease and flour the bottom and sides of a 9 inch (23 cm) round cake pan.

In the bowl of your electric mixer (or with a hand mixer), beat the butter and sugar until light and fluffy. Add the eggs, one at a time, beating well after each addition. Beat in the vanilla extract.

In a separate bowl, whisk together the flour, baking powder, and salt. Add this mixture to the creamed butter and sugar, alternating with the milk. Beat until well blended. Pour the batter into the prepared pan and bake for about 25 minutes or until a toothpick inserted into the center of the cake comes out clean. Let the cake cool in the pan for about 10 minutes before turning it out onto a wire rack to cool completely.

Making the Custard Filling

In a small bowl, whisk together the custard powder and boiling water until smooth. In the bowl of your electric mixer (or with a hand mixer), beat the butter and sugar until light and fluffy. Beat in the custard mixture and then the cream. Beat in the corn syrup and the vanilla extract.

Assembling the Cake

Place the cooled cake layer on a serving plate. Spread the custard filling over the cake layer. Top with the other cake layer.
