  • 1/2 cup packed light brown sugar

  • 1/4 cup confectioners' sugar
  • 1/4 teaspoon ground nutmeg
  • Assorted colored sugar
  • 2 tablespoons half-and-half

Instructions

In a large bowl, dissolve yeast in warm water. Add sugar, salt, 1/2 cup butter, eggs, and warm milk. Beat in 4 1/4 cups flour until dough is thick and elastic. Turn dough out onto a lightly floured surface, and knead until smooth and elastic, about 8 minutes. Place dough in a greased bowl, turning to grease top. Cover, and let rise in a warm place (85°), free from drafts, 1 hour or until doubled in bulk.

In a medium bowl, beat cream cheese and 2 tablespoons melted butter until smooth. On a lightly floured surface, roll dough into a 24- by 10-inch rectangle. Spread cream cheese mixture over dough. Sprinkle evenly with cinnamon-sugar, cinnamon, pecans, brown sugar, and raisins. Starting from one long side, roll up jelly-roll fashion; pinch seam to seal. Place roll, seam side down, on a greased baking sheet. With kitchen shears, make cuts 1 inch apart from each end toward center, leaving a 2-inch section uncut.

Twist each piece outward, forming a ring. Cover, and let rise in a warm place, free from drafts, 45 minutes or until doubled in bulk. Preheat oven to 350°. Bake at 350° for 25 to 30 minutes or until golden. Cool on a wire rack.

In a small bowl, combine 2 tablespoons softened butter, corn syrup, and vanilla. Spread over warm cake. Sprinkle with confectioners' sugar, nutmeg, and colored sugars. Combine half-and-half and remaining 1 tablespoon melted butter, and brush over cake. Yield: 1 cake (10 servings).
